FOR THE RELISH
3 slices good quality smoked bacon, cooked and diced, reserve drippings
1 fresh jalapeno, stemmed, seeded and chopped
¼ cup onion, diced
½ cup fresh ripe tomato, diced
1 cup fresh corn, scraped from the cob (about 1 ear)
Salt, freshly ground black pepper, and cayenne, to taste
Put 2 tablespoons of the reserved bacon drippings in a medium skillet over high heat. Add onions and jalapeno and cook, stirring for 1 minute or until vegetables are softened. Add the tomatoes and corn and continue cooking and stirring for 1 minute. Remove the pan from the heat and stir in the cooked bacon and seasonings to taste.
FOR THE BURGER
1 ½ pound ground beef
Salt and freshly ground black pepper, to taste
2 teaspoons garlic powder
1 apple, grated
4 slices cheddar cheese
4 good quality hamburger buns, toasted
1. Mix the ground beef with the grated apple, garlic powder and salt and pepper to taste. Form into 4 patties.
2. On a preheated barbeque or grill cook patties to your liking. Two minutes before taking the burgers off the grill top each with a slice of cheese and let it melt.
TO SERVE
Place a burger on the bottom of each bun and top each with an equal amount of the relish. Top with the other half of the bun and eat it up!
