sCool Food: Culinary Boot Camp

Posted: Updated:

SANTA BARBARA- A major makeover for Central Coast school kitchens!

The hair nets are gone! Food service workers are getting a new modern chef hat, a new look, and some new training at a special Culinary Boot Camp in Santa Barbara.

Local chefs and caterers are hand picked to be here. They are sharpening their skills and gearing up for a school food fight.

They will help guide, empower and educate schools as they switch back to scratch cooking.

This Boot Camp is an intense obstacle course of food safety and sanitation. A crash course in the tools and training to make real food for students. Most school lunch trays are loaded with highly processed, packaged food that is soaked in sodium, chemically colored, artificially flavored and reheated in plastic.

The recruits will return to boot camp and practice being Chef Instructors. If they pass the test, they'll lead Culinary Boot Camps in local schools.

Boot campers are ready to face some heat from schools who find it tough to make healthy changes, but worth the work.

One in three local children is now obese or overweight.

The s'Cool Food Initiative is made possible by a very generous donation from the Orfalea foundation. Kinkos founder Paul Orfalea committed to ten years of funding for local school food reform.

Watch Jennifer Mandulay every Wednesday night at 5 for another special edition of s'Cool Food.
